This Principally crafted Champagne hails from Villers‑Allerand in the Montagne de Reims, where Stroebel farms old‑vine parcels of Pinot Meunier, Pinot Noir and Chardonnay grown on sand, limestone and clay. The 2017–18 blend is vinified biodynamically: spontaneous fermentation, oak ageing in large foudres, zero dosage (0 g/L) and no filtration. On the nose aromas of baked apple and pear, biscuit crust and burnt sugar lead into a palate of wild berry undergrowth, dried apricot and chalky minerality. The finish is intensely long, with a creamy texture revealing the winemaker’s natural‑wine ethos.
