From the Adelaide Hills region of South Australia, Moorak is a small, low-intervention label founded by self-taught winemaker Jordan Hein that celebrates hand-crafted, terroir-driven wines with minimal additions. Its Blanc de Blancs NV is a traditional-method sparkling made from Chardonnay that sees wild-yeast secondary fermentation in bottle with no fining and only sulphur added at disgorgement, drawing on base parcels from sites like Glendhu Vineyard in Carey Gully. The wine shows gentle bead and generous aromatics of pear and straw, with subtle richness and texture from full malo-lactic conversion and lees ageing in seasoned oak, finishing extra-brut and distinctive for its balance of freshness and breadth.
