Deep ruby in the glass, it opens with lifted aromas of plum, maraschino cherry and mixed spices — dark, brooding fruit balanced with subtle savoury and earthy undertones. On the palate the wine is supple and fleshy, with rich dark‑fruit flavours (dark cherry, plum, wild berries) framed by velvety, fine‑grained tannins and a long, balanced finish.
Vinified using ~55 % whole‑bunch fermentation and wild yeasts, then matured about 22 months in French oak (part new, part seasoned), bottled unfiltered — giving it both structure and a silky, layered texture.
This is a striking example of Tasmania’s potential for Pinot: dense yet elegant, dark‑fruited yet nuanced — ideal with duck, roast meats, mushroom dishes, or richer autumnal fare.
