Elisabetta Foradori is one of Italy’s most respected voices in biodynamic viticulture, known for reviving native varieties and shaping the future of Alpine wine. Her 2023 ‘Fontanasanta’ Nosiola comes from the hills above Trento in Trentino, a mountainous region tucked between South Tyrol and Veneto. Here, cool alpine air and limestone-rich moraine soils bring precision and lift to this rare local white. Made from 100% Nosiola, it’s delicately aromatic with notes of white flowers, alpine herbs, and stone fruit, finishing with a fine line of mineral tension. This release sees a gentle fermentation in stainless steel followed by six months on lees, capturing freshness over structure. A wine of quiet complexity and place—it’s a beautiful match for freshwater fish, soft cheeses or simply savoured on its own. With limited production, this is one to discover before it disappears.
