'Dokta Nova' Riesling 2025

Made by winemakers Mike and Callum Garland at Fervor, sourced from Two Peoples Bay and Mount Barker in Western Australia's Great Southern region. The wine is crafted with free-run juice cool-fermented in tank, while the pressings are hyper-oxidised and fermented in old French barriques, adding texture and depth without any overt oak character. Expect a pale straw hue with a vibrant, lifted nose of lemon rind, zesty lime, pink grapefruit, green apple and lime leaf, alongside high-toned florals, lemon sherbet and a chalky, mineral edge. The palate is lighter and drier than earlier vintages, almost spritzy in its youth, carrying the Great Southern's hallmark racing acidity through a long, fine-boned, citrus-driven finish. Structured and layered, it's a racy, German-inspired Riesling built for immediate drinking or graceful cellaring over the next decade.
