Mas de Périé is a biodynamic vineyard tucked up in the highest hills of Cahors, France. While Cahors is best known for its Malbec plantings (called Cot), Fabien Jouves has a fruit salad of varieties at his disposal. He inherited the land from his family, who were ready to sell. Learning this, he opted to study viticulture instead of medicine like he planned, and instead took over the family estate. Today Fabien is credited with bringing esteem to the region once more. He uses a combination of concrete vats, barriques, and casks depending on what the wine calls for.
