Lilian Duplessis converted his family estate to organic viticulture in 2007. The estate, which he inherited in 1999 from his father, consists of 9ha of vineyards including 1 Grand Cru, 6 Premiers Crus, a regional Chablis and Petit Chablis plot. Their vineyards are on the highly prized Kimmeridgian limestone soils and some vines date up to 80 years old. The Petit Chablis vines are situated on Portlandian soils with a vine age of 30 years. The resulting wines can show real restraint even in the warmer vintages, as the vines seem better able to cope with the warming climate. The Duplessis wines can show incredible complexity with age and maturation.
