Working from their cellar in Chablis, Édouard and Eleni Vocoret combine tradition with youthful precision, crafting small-production wines that capture the nuance of their vineyards. Their focus is authenticity — farming by hand, fermenting with wild yeasts, and ageing gently in old oak to preserve detail and texture.
Les Forêts, drawn from three plots within Montmains, faces south-east and is planted to 50-year-old vines. The result is a leaner, more austere expression of Chablis, with citrus rind, pear, and briny minerality on the nose. The palate is focused and energetic, showing sappy extract and a long, clean finish. A benchmark 1er Cru that embodies the purity and precision of the Vocoret style.
