At their small estate in Chablis, Édouard and Eleni Vocoret craft wines that capture the energy of their vineyards with remarkable purity. Their approach is artisanal and deeply personal — ploughing by horse, harvesting by hand, and allowing native yeasts to lead the ferment. Each cuvée reflects a specific parcel, bottled with minimal intervention and maximum expression.

Le Boucheron comes from a 0.44-hectare site between Vaillons and Les Forêts. Clay-limestone soils give the wine structure and mineral drive, balanced by fresh orchard fruit and a hint of bitter lemon. Textural yet linear, it finishes with clarity and poise. A pure, finely etched expression of Chablis grown on the region’s prized Kimmeridgian soils.
