Husband-and-wife team Édouard and Eleni Vocoret have swiftly become among the most exciting names in Chablis. Since establishing their domaine in 2013, they’ve gained acclaim for their vineyard-first philosophy, focusing on low-intervention farming and gravity-fed winemaking that lets each terroir speak. The results are vivid, expressive wines that combine tension, depth, and precision.
Séchet, sourced from two small plots on the northern tip of Vaillon hill, was planted in 1962 and produces low-yielding, concentrated fruit. Aromas of dried citrus, pear, apple and oyster shell meet a palate of ripe fruit and stony structure. Medium-bodied and generous, it carries through to a lingering, mineral finish — a graceful reflection of its hillside terroir.
