Édouard and Eleni Vocoret are part of a new generation reshaping Chablis. After meeting during the 2010 harvest in New Zealand, they returned to Édouard’s Burgundian roots to found their own domaine in 2013, guided by a shared vision of precision and purity. With hands-on organic practices and gentle, minimalist winemaking, their wines are transparent expressions of site and soil.
Les Pargues comes from a tiny 0.4-hectare parcel just south of Montmains, planted on Kimmeridgian limestone. Wild fermented and aged for 12 months in seasoned oak, it’s all tension and clarity — green apple, lemon zest and saline minerality, with a fine, dry finish. Vibrant and refined, it’s a true portrait of Chablis’s stony heart.
