Strawberry, creme fraiche, hibiscus. Dolcetto, a sweet sounding fruit full of freshness and vibrancy. When Micah made this he had the petillants he liked to drink in mind, not too leesy and chewy and fizzy, but stable and pure. A good intro to the style, or a safe friend for lovers of pet nat. 

The new Defialy wines from Micah, are really very good. Each cuvee is a portal into a fanciful, carefree universe of anthropomorphological characters with endearing personalities. Maybe that’s because the name is a portal itself, an abbreviation of the way his parents used to sign off letters “don’t ever forget i’ll always love you”. And you might find yourself reciting this to the wine’s before you take your last sip…
