Benoit Dehu has redefined Champagne production, applying a modern mind to what is otherwise very traditional winemaking. As an 8th generation winemaker he has fully immersed himself with the family estate and has dedicated his practiced to natural winemaking. The farming is now all biodynamic and his winery is solely filled with barrels and foudres for fermentation and aging vessels. Uniquely, his wines are all zero dosage, produced in the Brut Nature style - a combination that gives his wines ultimate precision. ‘Initiation’ is a white Champagne made from Pinot Noir and Pinot Meunier - flavoursome and alive.
