James and Jessica Audas decided to leave the big city and get back to a more holistic way of living. So, in 2017 they packed up and moved from Sydney to West Gippsland, where they established ARC Wines, otherwise known as A Random Collection. After having spent a few years of purchasing grapes and getting their feet wet in this new venture, they now farm a 4ha vineyard just south of Mount Baw Baw. They focus on sustainable farming and minimal intervention winemaking. Their wines are made using large wooden barrels, amphora, and tank, with only native yeasts. As a relatively newcomer on the scene, it’s exciting to see where these wines will go.
