Wines made by hand and tended with love in Languedoc Roussillon

The freedom and wide open spaces of the Languedoc Roussillon have seen some of the most open minded thinkers move to the South of France chasing dreams and possibilities. 

Cyril Fhal joins a group of esteemed winemakers that is going about things differently, rejecting the norms of AOC regulation and doing what feels right on his patch of dirt. 

For Cyril that means farming biodynamically and working with Carignan, Grenache and Macabeo in their rightful place, releasing his wines under Vins de Pays Cote Catalanes. 

Not far from the village of Latour-de-France on a north facing hillside Cyril works his land by hand with occasional plowing by horse. He harvests in small baskets with light crushing by foot with traditional ferments and minimal to no extraction. Seasoned barrels are the choice for maturation and everything is completed with the patience of a saint. 

These beautiful wines are made from manual labor and plenty of love. Produced in tiny amounts with the smell of the soils still detectable beneath your fingernails.
