I’ll Fly Away is the long-time dream turned reality for Tim Ward. After years of experimenting in other career paths, Tim found himself longing to satisfy his childhood dream. He took the plunge and studied winemaking in Melbourne and then toured the world, gaining experience and inspiration. It was one winery in the Loire Valley that solidified his trajectory – he wanted to make wines that were less about fruit, more about soil. Now based in Yarra Valley, Tim makes small-batch, artisanal wines, from specially selected sites. The “If I Had Wings” cuvée is a skin-contact Greco from the Chalmer’s vineyard. Three weeks on skins, 2 years in barrel, and 8 months in bottle, transform this from orange to ethereal.
