The late Stéphane Moreau was one of Chablis’s most gifted modern visionaries, blending inspiration from icons like Vincent Dauvissat and Didier Dagueneau with a deep respect for old, pre-industrial methods. Following his untimely passing in 2016, his wife Virginie has continued the domaine’s legacy with quiet determination and extraordinary skill. Under her guidance, the estate has earned two stars in La Revue du Vin de France, placing it among Chablis’s elite.

Sourced from three plots within Vaillons—including 75-year-old vines in Sécher—this 2023 offers lifted aromas of tangerine zest, white flowers, pear and oyster shell. The palate is chalky and saline, combining breadth with underlying energy. Aged in both stainless steel and seasoned oak, it strikes an effortless balance between richness and minerality. Broad yet racy, this is a superb expression of Vaillons’ mid-slope elegance.
