The name and personality of Tasmanian underground drinking

You can't really go past, through or around Tasmania without hearing the name Peter Dredge, Dr Edge or aka Dredgy. 

Some contract winemaking, a position as chief winemaker at Bay of Fires and eventually a paid partnership with the Ellis Family he relaunched Meadowbank wines and still crafts the wines there today.  In conjunction with the Ellis family he also secured a lease agreement of his own, a mere 1.5 hectares in which planted Pinot Noir, Chardonnay and Riesling. 

Known for finely crafted wines, modern colourful labels and the fact most of the island can call him a mate, Peter Dredge has carved his way into the landscape of Tasmania like he was part of the fabric that dorned it.  Most recently a finalist for 2020 Gourmet Travellers Winemaker of the Year. Dr Edge wines sell out vintage after vintage and even the savviest drinkers find it hard to get a hold of these coveted bottles. 

Peter Dredge’s Dr. Edge ‘Extra Brut’ Sparkling is a masterclass in Tasmanian precision - bright, taut, and effortlessly refined. Sourced from select vineyards across the east coast and Derwent Valley, it unites Chardonnay’s citrus drive with Pinot Noir’s gentle weight and texture. The nose is vibrant with lemon curd, apple skin, and crushed sea shell, leading to a palate of white peach, almond pastry, and chalky minerality. Fine bubbles and a bone-dry finish give it poise and energy, while extended lees ageing adds creamy depth. Crafted in the traditional method with minimal dosage, it’s a brilliant expression of Tasmania’s maritime terroir—pure, detailed, and seriously drinkable.
