Crafted by Bernice Ong and Julian Forwood of Ministry of Clouds in McLaren Vale, this rosé blends dry-grown Mataro from the sandy soils of Blewitt Springs with Cinsault from their own Chase Vineyard atop the Onkaparinga Rocks. A portion of the fruit spends brief time on skins before a gentle whole-bunch press, then the wine ferments spontaneously across stainless steel, concrete egg, and barrel, resting on lees for five months before bottling.

The result is a pale, salmon-hued rosé that's crisp, dry, and thoughtfully savoury. On the nose, expect delicate strawberry, pink lady apple, guava, and pomegranate, while the palate turns long and taut, with tangy raspberry fruit, a touch of bitter amaro character, and fine tannin grip for a refreshing finish.
