The dark mooned side of Cabernet. Spent 12 months in barrel before a further 4 months in tank, to shape up. Maraschino, dark chocolate and black olives, tough of wood spice. So detailed and linear. Another stellar Cabernet from Josh Cooper. Son of Macedon Range icons, Nelly and Alan Cooper of Cobaw Ridge. He has very successfully established himself as an emerging icon himself, working with vineyards across the greater Macedon and central Victorian region, making wines in a lo-fi, but intensely purposeful way. Australia has a long history with Cabernet, and many of its heroes are based in Victoria. Josh is no different here, working with Pyrenees fruit from a biodynamically farmed vineyard.
