'Arpège' Blanc de blancs Brut Nature Champagne NV

Pascal Doquet established his namesake winery in 2004 after nearly a decade of making wine under his family’s label. His passion for sustainable and organic farming ultimately led to his departure from the family estate. Today he farms just under 9 hectares, primarily in Vertus in the Côte des Blancs. He practices late ripening to add richness to his wines (similar to Egly-Ouriet and Benoit Lahaye for comparison). Although the focus is in the vineyard, in the winery he uses malolactic fermentation to add complexity, and ages one third of the base wines in oak barrel prior to their second fermentation. His wines are known for their mineral vivaciousness and layered complexity.
