A lovely intro to a sulphur free, textural white wine that doesn’t begin and end with Chardonnay. Sat on skins for 4 days, pressed to tank to settle then into old oak barrels for 5 months, no adds. A tete-a-tete of white blossoms and stone fruit. Super pretty acid, rivers of texture a line of bright minerality on the palate.
The new Defialy wines from Micah, are really very good. Each cuvee is a portal into a fanciful, carefree universe of anthropomorphological characters with endearing personalities. Maybe that’s because the name is a portal itself, an abbreviation of the way his parents used to sign off letters “don’t ever forget i’ll always love you”.
