Ten minutes south-east of Beaune in Bligny-lès-Beaune is where you will find Catherine and Claude Maréchal. Friends and mentees of the late, great, Henri Jayer, the wines of Catherine and Claude are fully destemmed. New barrels are added each year, but kept to a minimum to allow the purity of the fruit to shine through. There is no rule book for this domain. Techniques shift from year to year, pending the vintage and fruit conditions. Their 12 hectares of fruit are all found within the Côte de Beaune, including the appellations of Auxey-Duresses, Volnay, Pommard, and Savigny-lès-Beaune. Consistently ranking in the top scores of La Revue du Vin du France, the estate’s tiny production is no match for its tremendous reputation.
