Born into winemaking families, Lucy and Xavier Bizot grew up with a wealth of knowledge, experience, and exposure at their disposal. Lucy is the daughter of world-renowned Australian winemaker, Brian Croser of Petaluma Wines (and now Tapanappa Wines). Xavier’s father, Christian Bizot of Champagne Bollinger, planted the Bizot Vineyard on Brian’s recommendation and guidance. Their families were interwoven from early on and culminated in the marriage of Lucy and Xavier in 2003 – the year they also purchased the Crayères Vineyard, which is now the foundation of their Terre à Terre label.

Terre à Terre focuses on Bordeaux varietal wines and blends, and DAOSA is strictly sparkling. They are staunchly protective of their sparkling process, in so much as to trademark “Method ClassicTM” – replacing “Traditional Method” (a term unregulated in the Australian market) and “Champagne Method” (a term not legally used outside of Champagne). Producing a Blanc de Blancs (100% Chardonnay) as well as a Natural Réserve with a Pinot Noir base, DAOSA wines are all bottle-fermented and aged on lees for a minimum of 15 months prior to disgorgement.
