The Marolo Distillery is based in the heart of Barolo - Alba, Piemonte. Paolo Marolo, who was already teaching a course on herbal extracts and liqueurs, opened the distillery with the intention of showcasing quality, aromatic grappa, over the bulk, bland, distillate that was popular in the 1970s. He crafts small batches over long periods of time, protecting the aromatic nuances of the pressed grape skins and where they’re sourced. In fact, his first Grappa di Barolo read, “Deliberately Forgotten in Acacia Barrels” on the label. Using respected wine producers, Marolo sources grape marc from Barolo, Barbaresco, Moscato d’Asti, Valpolicella, and Brunello among others. The Grappa di Barolo is 100% Nebbiolo aged in oak barriques over 4 years. As of 2014 Paolo’s son, Lorenzo Marolo has joined the family business.
